Going to the butcher’s has never felt sexier. The newly launched Victor Churchill in the posh suburb of Woollahra in Sydney (just round the corner from the new Donna Hay General Store) has been making headlines for reinventing the humble butchery. Christened “the Prada butcher” by Sydneysiders, Victor Churchill has a dramatic interior dominated by a cluster of designer close-circuit cameras all focused on the lust-worthy gourmet treasure of the moment on display—a cheeky nod to a recent Louis Vuitton window dressing. A backlit wall constructed of Himalayan salt bricks releases salt into the air to reduce humidity does double-duty as the backdrop to the coolest glass-encased cool room where hunks of David Blackmore’s wagyu, New Zealand Cervena venison, kurobuta pork from Byron Bay, and Macleay Valley rabbits are prepared at eye-catching timber butcher’s blocks. In addition to a mind-boggling array of fresh meat, the store stocks artisanal charcuterie, ready-to-serve dishes and other gourmet goodies (including their own line of beautifully bottled stocks).

American Fashion Cookbook
