Christened “the Prada butcher” by Sydneysiders, Victor Churchill has a dramatic interior dominated by a cluster of designer close-circuit cameras all focused on the lust-worthy gourmet treasure of the moment on display—a cheeky nod to a recent Louis Vuitton window dressing. A backlit wall constructed of Himalayan salt bricks releases salt into the air to reduce humidity does double-duty as the backdrop to the coolest glass-encased cool room where hunks of David Blackmore’s wagyu, New Zealand Cervena venison, kurobuta pork from Byron Bay, and Macleay Valley rabbits are prepared at eye-catching timber butcher’s blocks.
