Forlino raises the stakes of Italian fine-dining in Singapore with its offerings of beautifully-presented, classic Italian fare in an elegant One Fullerton venue. With its many tables chasing down views of Marina Bay, renowned restaurateur Beppe de Vito’s downtown cosmopolitan outpost is the perfect power-lunching spot where corporate types dish out pampering, plated TLC to close deals.

 

Running a fine-dining restaurant is tricky and a big challenge. The food, service and atmosphere not only have to be immaculate, but each element has to cater to every customer’s whims and fancies. If we had to rate just based on atmosphere alone, we think Forlino is a winner. With its sprawling, postcard-perfect view of the Esplanade, Singapore Flyer, F1 racing track and Marina Bay’s waters, Forlino laid out a feast for our eyes before our meal had even begun.
 
The interior décor, clad in elegant shades of dark espresso and muted gold, is alluring and unapologetically lavish, yet not over-the-top. Despite its opulence, we instantly felt comfortable once we were seated. Smartly-dressed tables are spaced sufficiently far apart for quiet conversations or lively banter. The service staff executed their tasks with brisk professionalism, never hovering but seemingly omnipresent every time we needed something.
 
The food, mark our words, will halt all table conversation as each course arrives. Or at least that was what happened at our table. Serving as our appetizers, the panroasted scallops and the traditional octopus salad were a great prelude to the rest of our wonderful meal, as the talented Head Chef Giuliano Dacasto put together exquisite culinary compositions from within his kitchen.
Our mains, cooked to perfection, were the soaring high notes of our evening. The fresh atlantic seabass filet, perched on a bed of velvety wild mushrooms, was lapped with a flavourful thyme and potato sauce. The Wagyu beef cheek with herb mashed potatoes was done simply but impeccably, and was definitely a hot favourite at our table. Literally melt-in-the-mouth goodness, the sweetness and tenderness of the beef was a great partnership with the creamy potatoes. The molten lava chocolate cake with refreshing banana gelato and rum sauce added a sensational final punctuation to our meal, pushing all the right buttons for the chocoholics in us.
 
From as soon as we were seated to when we left, it was clear: Forlino is one of the few restaurants in Singapore that sweats the small stuff; passionately dedicated to providing each customer with a bona fide Italian fine-dining experience.
